Organic – Sri Lankan or Ceylon cinnamon is cut from the inner bark of Cinnamonum verum. It is related to (and often confused with) cassia, but has a more delicate, subtle, complex and nuanced flavour. As such, it is better used in sweet dishes. In savoury dishes, it is a popular compliment to lamb and game, and also goes well with chocolate, fruit, or cakes.
