What is Tea ?
Tea is the most popular beverage in the world after water. It’s a simple preparation of pouring hot water over cured leaves of the Camellia sinensis plant. There are many different types of tea; some have a cooling, slightly bitter, and astringent flavour, while others have vastly different profiles that include sweet, nutty, floral, or grassy notes. Black tea is the most popular worldwide, followed by green, oolong, and white tea.
Herbal teas are not made from the Camellia plant but from dried herbs, spices, flowers, fruit, seeds, roots, or leaves of other plants; they do not typically contain caffeine as do traditional teas.
Types of Tea
There are three major tea types based on processing or harvested leaf development – Black Tea , Green Tea and CTC Tea. These major tea types differ in how tea is produced and processed according to the different processes of drying and fermentation that determine its chemical composition.
Brewing Tea
Black and oolong teas are generally steeped in hot or boiling water (about 210º F) and brewed for about 4-5 minutes. Green tea is steeped at a slightly lower temperature 180º F from 4-15 minutes. The longer tea steeps, the stronger the flavor with bitter notes.
Differences Between Orthodox and CTC Teas
Orthodox (or handmade) tea making is the traditional style of tea processing, hence the name. The orthodox method, on the other hand, is focused on preserving the whole leaf and thereby the particles of tea are more visible curled tea leaves rather than crumbles.
CTC method is developed to produce tea quickly and get the same taste every time, the leaves are crushed into small pieces and often blended with different batches. Small particles of tea make CTC teas good for tea bags and visually it looks more like small crumbles or dust
Taste Differences
Orthodox teas are known for having more of a layered, bright and brisk taste. Orthodox teas are usually drunk independently or with a slice of some citrus to add an extra kick of freshness and vitamins.
CTC teas usually steep quicker, stronger and have very bold tastes and even bitter notes. This is why CTC teas are good for tea bags and are often consumed with milk, sugar or other additions to balance the tastes.
Orthodox teas require a lot more human attention and are more of an artisan craft. Hence they are costlier.
