Spices has special reference to cooking as it serves several purposes with primary need of enhancing taste of food by bringing out the natural flavours. The indispensable aromatic contents in spices plays a pivotal role in food in countries around the world especially Sri Lanka and other countries in the Asian region. Another very important aspect of spice application in food production is known to be the food safety and food preservation. Spices are the most essential ingredients of the staple food of Sri Lanka i.e. rice and curry, the preparation of which is inimitable when it comes to improving food taste, flavor and aroma with spices.
